She'd use a stewing hen, and we kids would throw the bones at each other at the dinner table when grandpa wasn't looking. Have fun at your gig Lorraine, and I start teaching Wednesday, too, I will be thinking of you - first class usually just introduces the syllabus and stuff tho (unless you have a very dedicated instructor who keeps you the entire time). Waco and Temple get a lot of evacuees, and have for at least 35 years. The forecast is for rain here, but not really flooding. I live roughly halfway between the Dallas-Fort Worth metroplex and Austin just a few miles west of I-35. In fact, we didn't get a single drop of rain from Hurricane Rita three years ago. However, I do have good friends that live in Slidell, LA and in Houston. My friend in Slidell has probably already made it to her mother's house in Dallas, so I'll try to call her tomorrow. My friend in Houston we talked with earlier tonight. He's going to ride it out. ::shrug::<BR/><BR/>Val, take care of yourself! My husband was out a full two weeks last October with pneumonia. It's the first time he had full blown pneumonia, but he is susceptible to bronchitis which in him can rapidly move to "walking" pneumonia. He had to take two rounds of antibiotics even with staying home. Take things slowly or you will be on your butt for longer than you want to be. You can have my chicken soup recipe (well, really it's a riff on one of <A HREF="http://www.guardian.co.uk/lifeandstyle/series/nigelslaterrecipes" REL="nofollow">Nigel Slater's</A>) to tie you over-- I'm not sure it cures all ills, but it certainly <I>can</I> clear your airways. It's also pretty easy to fiddle with to suit whatever you've got in the cupboard.<BR/><BR/>You need:<BR/><BR/>*Some chicken broth, as much as you want to eat<BR/>*1 or two small, hot red chillies, sliced finely and seeds removed if you prefer<BR/>*1 stalk lemon grass, cut into a few big pieces<BR/>*1/2 tbsp. fish sauce<BR/>*a handful or two of baby spinach<BR/>*a handful of basil leaves, shredded<BR/><BR/>Put the lemongrass and chillies into a deep pan with with the broth and bring to a boil; turn the heat down and simmer for 15 minutes. Remove and discard the lemongrass and stir in the fish sauce; then throw in the basil and spinach and simmer till the leaves wilt. Eat as is, or with soba noodles.<BR/><BR/>That's the basic recipe, though sometimes I replace the lemongrass with a few big slices of ginger and a couple of star anise, and maybe throw in a teaspoon or so of brown sugar.
